If you savor the flavors of the Louisiana bayou country, then you are most likely familiar with the Cajun spice used in this cuisine. Although Cajun spice blends can vary from chef to chef, the mix usually contains a variety of black and red peppers, garlic, onion powder and paprika. The mix is used to season a variety of savory foods in Cajun-style cuisine. Meats traditionally were preserved by smoking, because refrigeration was scarce at the time Canadian Acadians were sent to live in the bayous of Louisiana. Cajun dishes that use Cajun spice seasoning include gumbo, a rice, shrimp and vegetable dish; crawfish or crab boil; Dirty rice; and Blackened fish, which utilizes Cajun blackening spice and although not a traditional Cajun dish is very tasty nonetheless.
