If you savor the flavors of the Louisiana bayou country, then you are most likely familiar with the Cajun spice used in this cuisine. Although Cajun spice blends can vary from chef to chef, the mix usually contains a variety of black and red peppers, garlic, onion powder and paprika. The mix is used to season a variety of savory foods in Cajun-style cuisine.
